Hoi An and the cooking lesson

A local chef tries to teach us Vietnamese cooking, which in this case, entails wrapping food in about 12 layers of banana leaf:

First, you have to temper the banana leaf over a flame so that it will become flexible and not crack when you're wrapping food in it.

Later, he teaches the tourists how to wrap spring rolls in rice paper.


We didn't make this on this particular occasion, but here's a banana flower, which makes a wonderful salad:
